A graduate of Asheville-Buncombe culinary, his love of freshness is evident in all of his inspired dishes. While executive chef at Ophelia’s World Café in Asheville, NC he came to hear the critics say “hands down the best food in Asheville”. His lead at Zebra Restaurant in Charlotte, NC left his patrons saying “Jamie’s specials are amazing…I always love the feeling of walking down the street right before I open the door cause I know it’s going to be SOOOO good!”
Jamie’s cooking style draws from eclectic food approaches world wide infused with a strong southern twist and impeccable presentation.
At the Lake Rabun Hotel & Restaurant Jamie's sea scallops are caramelized and placed on a bed of country ham, creamy grits and a chive burred blanc sauce. His filet mignon, rubbed in herbs from his culinary garden, is served a top rosemary infused smashed potatoes with blue cheese mousse and a red wine balsamic sauce. His fried green tomatoes dipped in creole spiced cream sauce are a must have!
Jamie is culinary trained but somehow you think “this is a guy who is just naturally gifted with food, a guy who makes dinner memorable”. He loves his craft and it’s evident.
